Notice the squirting out the sides, minimal crema, and it blondes quite quickly. Also impressive is the horrible cinematography.

This shot was “OK” but underextracted IMHO
I adjusted the grind and gave it another whirl- better- video starts about 7 seconds into shot. Nice but fast dissipating crema.
Weiss Distribution Technique

This post begins with a pulled shot.
This is my first recorded pull using the Weiss Distribution Method. This shot seems over extracted but supposedly that’s what the Roman Espresso from Blue Bottle calls for. My wife said it tasted “mild” compared to what she is used too (I think its because I made her a cappuccino instead of a breve as she is used to the rich cream taste) The ECM Giotto seems like it might need a new group gasket as I get leaks around the outside of the portafilter from time to time. This Weiss Distribution method is a great idea, however extra steps and extra time now to make coffee. Oh well good thing I like it.
The Weiss Distribution Technique requires some extremely sophisticated equipment. Note Below
Basically you funnel your grounds using the yogurt cup (or applesauce) with the bottom cut off and then you stir really well eliminating clumps and making everything even. Then you lift off the cup/funnel and you just Weiss’ed your distribution. Don’t go telling people your using the Weiss Distribution Technique or the WDT because they will think you are nuts.
